Candida Diet Dessert Recipes

GRAINS 

Rice-Almond Pancakes
  • 1 1/2 cups brown rice flour 
  • 1/4 cup almond flour (packaged) 
  • 1 egg
  • 1/4 cup almond milk
  • 1/4 tsp cinnamon 
  • 2/3 cup water 
  • 4 drops stevia liquid or 1/2 tsp stevia powder 
  • Dash of vanilla 
  • Unsweetened applesauce 
Combine all ingredients except apple sauce to desired consistency (more liquid equals thinner pancakes). Butter skillet and cook until golden brown. Lightly coat pancakes with unsweetened applesauce just before serving.

Buckwheat Blueberry Pancakes
  • 2 eggs, beaten
  • 2 tbsp grapeseed or coconut oil
  • 1 tsp vanilla extract (alcohol-free) 
  • 10-15 drops stevia liquid 
  • 1/2 tsp cinnamon 
  • Pinch of nutmeg 
  • 1 cup Bob's Red Mill buckwheat pancake mix 
  • 1/2 - 1 cup chopped walnuts 
  • 1/2 - 1 cup blueberries, fresh or frozen 
  • 1 scoop of Vitol 100% Egg Protein powder 
  • 1 cup almond milk, or enough to get desired consistency 
  • Butter or coconut oil for cooking 
  • Unsweetened applesauce 
Mix together eggs, oil, vanilla, stevia (10 drops), cinnamon, and nutmeg. Add pancake mix, protein powder, walnuts, blueberries, and almond milk, stirring well after each addition. Heat butter or coconut oil in a skillet on medium-low heat (if you cook the pancakes on high heat, the outsides will burn before the insides cook through). Flip over when bubbles on uncooked surface pop. Top with unsweetened applesauce, stevia (5 drops), and a sprinkle of cinnamon. Makes 4 to 5 servings.
 
Sesame Millet 
  • 1 cup uncooked millet 
  • 3 cups water
  • 1 tsp sea salt
  • 2 tbsp olive oil 
  • 1/4 cup raw, hulled sesame seeds 
Wash millet and drain. Boil water and add sea salt. Add millet, cover, and simmer on low heat for 25-30 minutes. Let stand for 5-10 minutes to increase fluffiness. While millet is standing, put sesame seeds into a frying pan and toast over low flame for 5 minutes, stirring frequently until golden brown. Once seeds are brown, add olive oil and millet. Stir mixture over medium heat for 5 minutes and serve.
 
Quinoa Medley 
  • 2 cups uncooked quinoa
  • 2/3 cup red bell peppers, finely diced 
  • 5 scallions, finely chopped
  • 1/2 cup dry-roasted pecans, finely chopped 
  • 1 cup Italian Vinaigrette Dressing 
Cook quinoa for 10-15 minutes. Drain and let cool. Add peppers, scallions, pecans, and dressing, Stir and serve.
 
Nutty Brown Rice 
  • 1 cup brown basmati rice, rinsed well in 3 changes of water
  • 1/2 cup raw pine nuts
  • 1 tbsp olive oil 
  • Sea salt and pepper to taste 
Boil basmati rice as directed on packaging. In a separate pan, roast pine nuts over a low flame, stirring frequently until lightly browned. Add olive oil and cooked rice. Mix together and season with salt and pepper.
 

Cinnamon Oatmeal or Brown Rice Hot Cereal 
  • 1 1/2 cups water
  • 1/2 tsp sea salt
  • 1/2 cup Bob's Red Mill Oatmeal or Creamy Rice cereal 
  • 1 tsp cinnamon 
  • Splash of unsweetened rice milk or almond milk 
  • 1/4 cup raw pecans, chopped 
Bring water and sea salt to a boil. Add cereal and simmer for 5-8 minutes, stirring occasionally. Stir in cinnamon and top with pecans and a splash of almond or rice milk. To find out more, you can check out Candida Diet Dessert Recipes.
