Candida Cleanse Diet

Quinoa Burger 
  • 1 medium onion, chopped 
  • 3 garlic cloves, minced 
  • 1 cup cooked black beans
  • 1 tbsp olive oil 
  • 1 carrot, finely grated
  • 1/2 cup baked sweet potato (without skin) 
  • 1 cup cooked quinoa
  • 1 tbsp caraway seeds
  • 3 tbsp cilantro, chopped 
  • 2 tbsp tomato paste 
  • 1 tsp raw apple cider vinegar 
  • Pinch of cayenne (optional) 
  • Pinch of sea salt 
Saute onions and garlic in 1 tbsp of olive oil. Add beans and cook for 2 minutes. Turn off heat and mash beans in pan. Put beans into a bowl and mix in remaining ingredients. Form patties and bake until heated through, approximately 5-10 minutes on each side.

Candida Cleanse Diet

QUINOA 

Soak 1/4 cup of raw quinoa for 15 minutes, if possible, to remove the saponin coating, which can have a bitter taste. Rinse quinoa thoroughly. In a saucepan, bring to a boil 1/2 cup of water, 1/4 cup of quinoa, and a pinch of sea salt. Cover and simmer for about 20 minutes. Remove from heat and allow to sit for 5 minutes.

Indian Risotto 
  • 1 tbsp ghee (clarified butter)
  • 1 jalapeno, minced
  • 1 tsp cumin seeds 
  • 1/8 tsp asafetida 
  • 1 cup split yellow mung beans 
  • 1 cup brown basmati rice, rinsed well in 3 changes of water 
  • 1 small cauliflower, cut into florets 
  • 6 cups water 
  • 1/2 tsp ground turmeric 
  • 1 1/2 tsp sea salt 
  • Fresh ground pepper to taste 
Heat 1/2 tbsp of ghee in a saucepan. Add jalapefio and cumin seeds. Cook until seeds begin to darken. Add asafetida and stir for a minute. Then add mung beans, rice, and cauliflower and cook for 3 minutes while stirring. Add 4 1/2 cups of water, turmeric, and salt, and bring to a boil. Lower heat, cover, and simmer, stirring frequently, until the beans and rice are tender (30-40 minutes). Add more water if necessary. Stir in black pepper and drizzle with remaining melted ghee.
 

Tuscan Country Roast Chicken 
  • 1 roasting chicken, 3 lbs or more, thawed 
  • Bay leaves to taste (4 fresh or 2 dry) 
  • 1/2 lemon (with peel)
  • Several garlic cloves, halved
  • Sea salt and fresh ground pepper 
Preheat oven to 400°. Rinse chicken and wipe dry. Fill cavity with bay leaves, lemon, salt, pepper, and a couple of garlic cloves. Salt and pepper chicken on all sides. Tuck remaining garlic clove halves into the hollows of the thighs and wings. Place chicken on a rack in a roasting pan with about 1 inch of water in the bottom to keep drippings from burning. Bake at 400° for 90 minutes. Reduce temperature to 350° and bake for 15-30 minutes or until legs move easily and juices run clear.
 

Optional: Make gravy with pan juices, and pour over a whole grain of your choice.
 

Roast Duckling
  • 1 4-5 lb duckling, completely defrosted 
  • Chef's Salt 
  • 4 tbsp butter
  • 1 parsnip or carrot, chopped 
  • 2 stalks celery, chopped
  • 1 onion, chopped 
  • 2 garlic cloves, thinly sliced 
  • 4 black peppercorns 
  • 1 bay leaf 
  • 1/2 tsp marjoram 
CHEF'S SALT 
  • 1/2 cup sea salt
  • 1/2 tbsp paprika
  • 1/2 tsp pepper 
  • 1 tsp white pepper 
  • 1 tsp celery salt 
  • 1 tsp garlic salt (not powder) 
Mix all ingredients for Chef's Salt. Preheat oven to 300°. Put butter in the bottom of a roasting pan with a tight-fitting cover. Remove neck and giblets from duck cavity and discard. Rinse duck in cold water and rub inside and out with Chef's Salt. Place duck, breast-side down, directly on the butter in the roasting pan. Place vegetables and garlic inside and around the duckling. Add about 9. inches of water to the pan. Add the peppercorns and bay leaf, and sprinkle marjoram on the duck and in the water. Cover and cook for 2 hours. 


Carefully remove duckling to a platter and let it cool (if you don't let it cool, it won't turn out right). Split duckling lengthwise by standing it on the neck end and cutting with a sharp knife from the tip of the tail down to the center. Quarter if desired. Save leftovers for soup.
