Low Yeast Diet

Asian Coleslaw 
  • 2-3 cups cabbage, chopped
  • 1/4 cup daikon radish, grated
  • 3/4 cup green onions, finely chopped 
  • 1 green apple, finely chopped 
  • 1 cup sliced raw almonds or sunflower seeds 
  • 2 tbsp raw, hulled sesame seeds 
  • Sea salt and pepper to taste 
  • Coleslaw dressing

COLESLAW DRESSING 
  • 1/4 cup sesame oil
  • 1/4 cup rice vinegar (unseasoned)
  • 2 tbsp fresh lemon juice 
  • 1-3 drops of stevia liquid 
Put all ingredients in a jar and shake well. Pour over coleslaw mixture. Season with salt and pepper.

Candied Yam 
  • 1 small yam 
  • Butter 
  • 1-3 drops of stevia liquid 
Bake yam at 350° until tender, about 45 minutes. Slice open and add butter and stevia.
Sweet Potato Fries 
  • 2 sweet potatoes, sliced like French fries 
  • 2 tbsp grapeseed oil
  • Sea salt
Put sliced sweet potatoes in a bowl. Pour grapeseed off over sweet potatoes and mix to make sure oil covers all sides of the sweet potatoes. Lay out fries on a baking sheet and sprinkle with sea salt. Bake at 400° for 45 minutes. After 20 minutes, stir and turn fries over to cook on the other side.
 


Leeks and Leaves 
  • 6 leeks
  • 2-3 tbsp butter
  • 1/2 - 1 cup vegetable stock 
  • 1-2 bunches spinach, chard, or kale, or a mixture of these, chopped 
  • Pinch of nutmeg 
  • Sea salt to taste 
Trim the leeks, using only the white and pale green parts. Slice in half lengthwise, wash well, and dry. Slice crosswise into small pieces. Saute leeks in butter in a large skillet until they soften and begin to fall apart. Add stock and season lightly with sea salt and nutmeg. Stir and simmer for 5 minutes.
