Candida Diet Menu

Homemade Chicken Soup 
  • 2 large chicken breasts, including bone and skin 
  • 1 clove garlic, peeled
  • 1 tbsp olive oil
  • 1 4-oz can of tomato sauce 
  • 1/2 cup carrots, sliced 
  • 2 stalks celery, diced (add tops as well for flavor) 
  • 1 bunch kale, chopped 
  • 4 small red potatoes, diced with skins on 
  • 2-3 quarts water 
  • Sea salt and pepper to taste

Place all ingredients in a 6-quart stock pot. Bring to a boil, and then simmer on low heat for 3 hours, stirring occasionally.
 
Fish Curry
  • 1 tsp Thai Kitchen red or green curry paste 
  • 1 cup coconut milk, unsweetened
  • 1 tsp fresh lime juice
  • 3 stalks of lemongrass, cut into quarters 
  • 1-1/2 lbs fresh white fish of your choice, cut into chunks 
Combine coconut milk, lime juice, lemongrass, and curry paste in a skillet. Simmer on low heat for 5 minutes. Add fish. Cook on low for 5-10 minutes.

Chicken Stir-Fry 
  • 1 tbsp coconut oil
  • 1/2 cup broccoli florets, cut into bite-size pieces 
  • 1/2 cup carrots, sliced
  • 1/4 cup water chestnuts 
  • 4 oz boneless and skinless chicken tenders, cubed 
  • 1/2 cup onion, sliced 
  • 3/4 cup bok choy, chopped 
  • 1 tbsp Bragg's Liquid Aminos 
  • Toasted sesame seeds 
Place wok or skillet over medium heat. Add coconut oil and heat for 3 minutes. Add the rest of the ingredients, except the sesame seeds. Stir-fry on high heat for another 5-10 minutes. Cook until vegetables are the desired texture. Top with sesame seeds and serve.
 

Cornish Game Hens 
  • 1 cup wild rice, cooked
  • 1 tsp olive oil
  • 1/4 tsp fresh thyme, finely chopped 
  • 1/4 tsp fresh sage, finely chopped 
  • 1/4 tsp fresh rosemary, finely chopped 
  • 1/2 cup toasted pine nuts
  • 2 Cornish game hens
  • 1 onion, peeled and thinly sliced 
  • 5 garlic cloves, peeled and halved 
  • Sea salt and pepper to taste
  • Butter (melted) and olive oil for basting 
Cook wild rice as directed on package to make 1 cup of cooked rice. Mix in 1 teaspoon olive oil, herbs, and toasted pine nuts. Stuff game hens with rice mixture and place on a roasting pan. Scatter onions and garlic around the outside of the hens. Brush hens with melted butter and olive off, and season with salt and pepper. Bake at 375° for 1 hour, basting occasionally.
 

Brown Rice Penne with Chicken Sausage and Vegetables 
  • 1 lb brown rice penne
  • 2 chicken sausage links (peel off pork casings after cooking)
  • 1/2 red bell pepper, diced 
  • 3 Roma tomatoes, diced 
  • 1 cup fresh arugula, washed and finely chopped 
  • 1 tbsp olive oil 
Cook brown rice penne in boiling salted water as directed on package. Broil chicken sausage links until cooked. Peal off pork casings when cooled. Slice links and put aside. In a large saucepan, heat olive oil and add bell peppers and tomatoes.

 
Simmer for 10 minutes. Add arugula and cook until wilted. Remove from heat, mix in sliced sausage and penne, and serve. To find out more, you can check out Candida Diet Menu.
